Abstract: This paper relies on ethnographic research carried out in subarctic Yakutia in northeastern Siberia in order to explore why certain tastes are perceived differently in various communities. The proposed phenomenological approach highlights the importance of the material quality of fat as it is perceived in three Sakha village communities in Yakutia (Sakha Republic). This perception is rooted in ontological foundations that are significant not only in food culture but also in the broader context of Sakha adaptation in Northeastern Siberia, in the subarctic environment.
