Abstract: This paper explains the general trend of the reevaluation of traditional eating habits in Japan in recent years and the development of the cultural policy of the Agency for Cultural Affairs, the government agency which officially recognises the cultural value of traditional food culture and examines the examples submitted for the registration process as intangible cultural property.
